
To the left is a photo of my delicious fruit cobbler. No, that's a lie. Why do I lie to my fan base of 1?!?! I'm a lying liar from Lie Town, population 1!!
However- because I got nothin' this week, I am posting a very good fruit cobbler recipe that I have used for years. It works well with any fruit, but I find that I prefer it with blackberries or blueberries. My dad loves it, and he has no trouble giving me an honest critique of everything I cook or bake!
Basic Fruit Cobbler
4 Tbsp. butter
3/4 cup all-purpose flour
3/4 cup white sugar
1 tsp. baking powder
1/4 tsp. salt
3/4 cup milk
2 cups fruit
2 Tbsp. additional white sugar
Adjust oven rack to upper-middle position and heat oven to 350 degrees F. Place butter in an 8x8" square pan and set in the oven to melt. Meanwhile, combine flour, 3/4 cup sugar, baking powder, and salt. Remove pan from oven and pour melted butter into the dry mixture. Add milk and stir until smooth batter forms. Pour into pan and scatter fruit over batter. Sprinkle with the 2 Tbsp. additional sugar, and bake for 50-60 minutes, or until batter has set and cobbler is golden brown.
I usually double the recipe and bake it in a 9x13" cake pan.

i would love to eat cobbler, but alas. my new ms diet tells me i can only eat angel food cake. which is basically a gross, soggy cracker. you are a really great cook/baker. poor Frankie and Darby; it's always such a treat when Auntie Aramie comes to town. instead of cold cereal, they finally get a gourmet meal. and cobbler.
